Real time usability

Would the response time for the Open Cascade library be quick enough for a real time modeling of live data?

For example a QuadCopter gyro telemetry data in real time back to the process machine?

Still working out the possible data volume and transmission delay.

Yep, but that's not the focus of OCC. In this case a tool(kit) like VTK or Mayavi would p'bably serve you better. Pointcloud lib ( ) would be my initial reflex.
